The price is locked when the factory accepts the order from Cupra UK. Unless the dealer cocks up and sits on the order for ages before submitting the order for acceptance, and the price changes in the meantime, you can take it as read that the prevailing price when you placed your order is the price you'll pay.
The only real exception to what you'll pay monthly (if financing) is if you don't get your finance deal approved and locked in by VWFS and there's a drastic change to GFV or a deposit contribution changes or is removed. That happened to me once - I ordered a Golf R, and my dealership were insistent that applying for the finance then was a waste of time. a month later, and without notice, VWFS reduced the GFV by almost £3k, adding about £100pm to my PCP. I ended up buying cash after getting a big redundancy lumper just before it arrived.
