Maybe stupid question, I ordered my Born with DCC and it has the options in the menu under drive profiles but I'll be honest I can't say I notice too much of a difference between modes... suspension feels similar between Comfort, Performance and Cupra modes
Is there a way to confirm if it actually has it installed? If it's in the menu I'm assuming it means it's there?
How sensitive is it supposed to be?

The comfort mode should feel noticeably softer than performance and Cupra mode.
If you're feeling no difference, there's a possibility you still have some of your transport blocks in, significantly reducing suspension travel.
