Solved. Thanks to the retard that designed it.
So, lifted the passenger carpet, as that sounded like where the water was going. Yep.... 10mm deep foamy water sloshing around the entire passenger footwell.
Add to that the amazing idea of using super absorbent foam under the carpet = water travelling literally everywhere through the foam.
So, UNDER THE CARPET there is a T-Piece and some kind of push-in plunger/valve (doesn't seem to be non-return) thing has fired out and therefore all the water just goes under the carpet.
Who puts something like that under the carpet. It appears to be the T junction for the rear camera and the rear windscreen.
So, my diagnosis? The rear jets were certainly blocked with crap from the road (I have never owned a car that gets so dirty on the rear so quick). The pressure built up and it popped the weakest link... the stupid Tee under the carpet.
But, this part that came out (which I found on the other side of the footwell) now doesn't stay in, as the clips have broken off.
Called Seat. Yea, waste of time. Could bring it in Friday for 'evaluation' which I have to pay £115 for. Plus, the loan car is £15 insurance and has to be back same day. So that's four hours round trip driving on Friday.
Then, she says they can't guarantee that they will actually get to look at it. Idiots.
Then, Seat head office will decide if it's a warranty issue, and then I am looking at late February.
Don't bother.
So, I need to dry the carpet and get a new T-piece. I shall also be moving it out from under the carpet.

Wow.. .those pics are big.
All dried out. Lifted the carpet up and blasted a heater underneath all day + soaked it up with towels.
Fixed the existing Tee piece (basically glued it back in), as the useless spares dept couldn't find the part.
It's now moved up out from under the carpet.

Thanks for proving the follow up info, now praying I don't fall foul of this issue but at least know where to look!
Exact same happened to me last weekend following a sub-zero week (wish I’d seen this post earlier).
My connection piece however was not under the carpet rather it was about 10mm from those 4 electrical connectors which feed the rear of the car… but still causing a very wet floor and underlay, I had the added pleasure of it triggering several electrical issues (12 v supply warning on dashboard, half of rear red light bar remaining permanently dimly lit even when locked overnight, alarm triggered at 2 am to my neighbours pleasure !).
My first indicator something was wrong was the 12v supply warning… then when temperatures rose above zero I realised rear washer wasn’t working and could hear the sound of water near footwell… the the other gremlins kicked in within hours. I worked out what was going on.
Connection piece now fixed… carpet drying out as we speak…

Nillor… glad you got same day investigation and fix within a week. Sounds like you had great responsiveness from your dealer in Germany. Here in UK my dealer quoted 2 weeks just to take a first look (6 weeks if I wanted a courtesy car). For a car that’s in warranty I find that absolutely unacceptable and a real shame because I love the car and this is the only issue I’ve had in 2 years. I had to find another way to get it fixed as I need the car every day… took less than 1 hour to find and repair. Good luck with yours - glad to hear you had great service.

Yea... if you read earlier in the thread.... my Seat garage are just as useless (and they are the second one I have tried).
The parts dept took 4 phone calls and still could not find the part. How hard is it to find that on the computer.
In the end, I just glued it back in.
If the jets ever fail again (which I doubt), then I know what the issue is.

My ‘fixer’ used cable ties to stop it ever popping out again… quite an impressive fix.
I followed up with the drying out process (I emptied a full washer bottle before I realised where it was all going - doh). Got most of the loose liquid out but bought a few bags of desiccant to soak up any residual damp…. 80ml coming out every day. I left the plastic panel off to stop any condensation build up on the electrics. All good so far. Will likely keep the panel off until the desiccant stops absorbing water.
It’s a real shame that my next car decision has already been moved to another brand based purely on the ‘what if I need to get something fixed’ fear (I’ve had enough car brands to know this is far from normal).

I made some phonecalls and found a VW Service-Center that had free slot. Unfortunatly because of the bad weather they had a lot of crashed cars to repair, so they had no loaner car for me. They gave me a ride home. And my colleague gave me a ride to work for the next few days. So not the perfect situation.
